I know that recently Mexico has been getting a bad wrap, but it’s still no reason to not celebrate Cinco de Mayo.
My hubby was super excited this morning, because Moes his favorite lunchtime local is having a give-away today in celebration of Cinco de Mayo and the first 100 customers get a free t-shirt. Exciting, I know we really live it up in the Pavone household!
Since I love any excuse to eat some yummy Mexican food and pretend I’m sitting pool side with a margarita in hand especially on this raining day in NY I will be doing my part to celebrate by making this for dinner tonight.

Trust me it’s totally yummy, super cheap, and easy to make. I always get the hugest compliments when I make it for parties.
